Wow, crêpes seem simple to make. Well the mixture seems simple to make. Cooking it is another story.
Then again, perhaps this is not a good time to introduce a white flour-based element to my otherwise healthy banana.
crêpe batter:
1/2 Cup water
1/2 Cup flour
2 eggs
1 C milk
Blend in blender until smooth. Refrigerate for 1 hour or overnight. Cook them in a non-stick 9" pan with e.v. olive oil. Yes, the recipe calls for butter, but I prefer e.v. olive oil. Call me strange. Also, I think I'd change it to skim milk and whole wheat flour. Then again, I'll probably just stick with a banana with some yogurt. I'll keep you posted.
